Research areas:
The research interests in our group focus on the physiological, biochemical and molecular analysis of nisin production and its regulation
in Lactococcus lactis. Our research projects concern different aspects of carbon metabolism in L. lactis, to provide insight into the
regulatory mechanisms underlying the biosynthesis of nisin. Apart from this our aim is to develop dairy foods with enhanced safety and
shelf life. We also focus on genetic regulation of beta-galactosidase in Lactobacillus sp. The aim is to produce the enzyme constitutively
for various biotechnological uses.
